A treat, known as mofongo in Latin American countries, these small bites are rapidly prepared and eaten just as quickly.
Ingredients:
2 ripe plantains (yellow)
1 lb unsalted cod
Breadcrumbs
1 egg beaten
¼ teaspoon pepper
1 pinch cayenne pepper
Oil for frying
Instructions:
Poach cod 15 minutes, rinse and crumble.
Cut the ends of plantain, wash and make a slit along its length. Boil with skin in salted water for 20 minutes.
Peel and mash the plantains. Fold shredded cod with plantains. Add pepper and cayenne pepper. Shape into patties of medium size.
Dip patties in egg, then breadcrumbs. Fry in hot oil about 5 minutes each.
Serve the plantain cod bites warm.
