Peas puréed finely is usually served as a sauce over white rice.
1 tablespoon butter
1 large oignon, diced
4 cups chicken broth
1 teaspoon salt
1 teaspoon ground pepper
1 package frozen green peas (20 to 30 oz)
Melt butter in deep skillet. Add the onion to sauté. Add chicken broth and bring to a boil. Add peas and simmer uncovered for about 10 minutes. Pour into a blender and reduce to a smooth and uniform puree.
Return to stove. Add salt and pepper. Serve over white rice.
