This Creole version of the quiche is a blend of popular ingredients that with its particular form pays tribute to the Black Venus. A simple recipe and mostly... delicious.
Ingredients:
3 tablespoons unsalted butter, melted
8 slices white or whole-wheat bread
6 slices bacon
6 large eggs
Coarse salt and ground pepper
1 cup shredded mozzarella cheese
Instructions:
Preheat oven to 350 F. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, remove the crusts. Press each slices into each muffin cup, making sure bread comes up to edge of cup. Brush bread with remaining butter.
In a large skillet, cook bacon over medium, until almost crisp, about 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup. Crack an egg in a small bowl, whisk in a bit of cheese. Season with salt and pepper and pour in a bread cup. Repeat for the remaining eggs.
Bake for 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.
