Chicken Martinique recipe

Chicken Martinique


1 chicken in pieces
2 tablespoons olive oil
2 cups reg, green and orange peppers cut into strips
2 onions, sliced
4 tomatoes, peeled and diced
1 cup white wine
1 tablespoon Dijon mustard
3 cloves
½ lb smoked lard, diced
3 dried garlic
3 tablespoons Pickliz*
Salt and pepper to taste
Few thyme sprigs


Heat olive oil in a frying pan and fry the previously seasoned chicken pieces.** Brown the chicken.

Add peppers, onions and bacon. After 5 minutes, add tomatoes, wine, mustard and cloves, and cook for approximately 30 minutes over medium heat.

Reduce heat to low and simmer for 15 minutes, adding garlic and spoonfuls of Pickliz.

Serve with rice or potatoes and garnish with thyme.
