A blend of onions, garlic, herbs, and other spices which is a used in nearly all Haitian food. Many Haitians keep a jar in their refrigerator at all times. It can even be added in recipes that do not call for it specifically.

A blend of onions, garlic, herbs, and other spices which is a used in nearly all Haitian food. Many Haitians keep a jar in their refrigerator at all times. It can even be added in recipes that do not call for it specifically.

Ingredients:


A bunch of parsley
A bunch of coriander
5 sprigs of fresh thyme
2 onions
2 shallots
1 head of celery
2 peppers (1 green + 1 red)
3 packets of green onions
2 chicken broth cubes (or 3 tablespoons powdered broth)
5 cloves
10 garlic bulbs
Juice of a lime or lemon
5 tablespoons of olive oil
1 teaspoon of vinegar
1 Scotch bonnet pepper
Salt and pepper to taste
Water

Instructions:
Wash all the vegetables and herbs. Remove the stems from the herbs, keep only the leaves. Cut vegetables into portions that are easy to blend in a blender. Put everything in a blender robot. Mix to a semi-thick consistency. Add a little water if the mixture is too thick for the machine.

Store in the refrigerator in a Mason jar.
