A pizza where plantains replace the traditionaldough that can be be done fairly quickly. And omittingthe prosciutto, you get a delicious 100% veggie pizza.
Ingredients:
2 plantains, ripe enough
1 love garlic, crushed or pressed
2 tablespoons olive oil
2 tablespoons pickliz
1 Spanish onion, sliced
2 X 1/2 peppers of different colors
6 slices prosciutto, cut into small pieces
1 cup young arugula, stem removed
1 lb. bocconcini, thickly sliced
Salt and pepper, to taste
Oil for cooking plantains
Instructions:
Preheat oven to 300 ° F. In a small bowl, combine oil, garlic and pickliz. Allow to marinate.
Peel, cut and fry the plantains. Absorb excess oil with a paper towel. Lay out plantains on a round tray covered with parchment paper. Using a rolling pin, flatten plantains so it looks like pizza dough. Brush with oil mixture.
Sauté the peppers, onions and prosciutto. Add salt and pepper.
On the plantains, garnish as follows: vegetables and prosciutto, followed arugula thenbocconcini.
Bake for 10 minutes.
Serve hot.
