Pikliz is a combination of shredded cabbage, carrot, onions, shallots and peppers. Haitians serve it with Griot, Tasso or fried plantain. It's really spicy and goes great with fresh fried dishes.



2 cups shredded carrots
1 tablespoon olive oil
1 onion, finely chopped
4 cups sliced cabbage
½ cup green peas
1 teaspoon salt
1 teaspoon pepper
1 garlic, minced
5 jalapeño peppers, cut in half
white vinegar


Place all ingredients in a large glass jar, except the vinegar. Add enough vinegar to cover everything completely. Let marinate one week before starting to use it.
