This cake is a cake celebrating the Epiphany. The two people who find the hidden beans become the king and queen of the day.

Epiphany Butter Cake


¼ lb soften butter
½ cup sugar
3 eggs, beaten
Zest of 2 limes, grated
1 ½ cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
¼ cup ground almonds
2 peas


Preheat oven to 350 degrees F. Grease a 9 inch pie dish.

Beat butter and sugar until creamy and gradually add the eggs. Add the lime zest.

Add remaining ingredients, except peas. Stir until ingredients are well mixed. Spread into prepared pie dish, then hide in the beans.

Draw a design with a fork. Brush with rum and bake 35 minutes.

Let cake cool for 5 minutes before removing from pie dish and transferring to a serving plate.
