Cream of Broccoli


1 ½ tablespoons vegetable oil
1 onion, finely chopped
2 tablespoons all-purpose flour
1 cup milk
½ cup chicken broth
1 cup cooked broccoli, chopped
½ teaspoon salt
Pepper, to taste
Nutmeg, to taste
Garlic powder, to taste


In a small saucepan, heat oil over medium heat and sauté chopped onion until transparent. Add flour, stir and simmer for 1 minute. Add milk, mixing with a whisk, add chicken broth, broccoli and seasonings, bring to the boil and let simmer one minute.
Remove from heat.

Pour mixture into a blender or food processor, operating the unit at high speed a few seconds.
Serve hot, garnished with pieces of cheese and broccoli.
