This dish from South America is simple and easy to prepare. The sweetness of the ripe plantains works perfectly with the meat and spices.

Relleno de Maduros


3 ripe plantains (yellow)
2 tablespoon butter
1 beaten egg
1 tablespoon flour
1 lb ground meat
1 cup mozzarella cheese
1 onion, finely chopped


Sauté onions in oil. Add ground meat and cook for 30 minutes. Turn off heat and add cheese.

Bring a pot of salted water to a boil. Plunge the plantains and boil for 20 minutes. Remove from water, peel and mash, adding salt and butter. Let stand a few minutes.

Take a bit of plantain mixture in your hands, forming a small cup and fill with meat mixture. Cover with mixture of plantain and roll into small balls about the size of an egg.

When you have all the small balls done, dip in beaten egg, flour and fry in deep fryer until golden brown. Blot in paper towels when taken out of the fryer.

Serve hot.
