A refreshing non-alcoholic concoction that has many virtues. In times of great heat the mauby is a very pleasant drink that is found all over the Caribbean.

Ingredients:



3 cups water
2 star anise
2 cinnamon sticks
5 pieces of mauby bark
10 cloves
2 bay leaves
the peel of 1 orange (dried)
1 teaspoon vanilla
2 cups brown sugar

Instructions:
In a deep saucepan place all the ingredients except for the sugar and on a med/high heat, bring it to a boil. Allow it to go for 5 minutes at a rolling boil, then turn off the stove, cover the pot and allow it to steep for about 5 hours.

Once cooled, pour the concentrate into a larger pot and add 10 cups of water along with the brown sugar. Strain and store in pitcher in the fridge.

Serve on ice.
