An excellent coloured rice full of Caribbean flavours is a delight to share. Enjoy it as is, or with grilled meat or vegetables.

Curried Rice


½ cup butter
1 big onion finely chopped
2 teaspoons curry
1 crushed garlic
½ teaspoon salt
½ cup green peas
1 cup basmati rice
2 ½ cup boiling chicken broth


Preheat oven 350°.

In a skillet, brown the butter, onion and garlic over medium heat for a few minutes. Add rice, peas and saute until rice turns yellow. Add curry powder, salt and chicken broth.

Place in a baking dish, well greased. Bake 25-35 minutes or until liquid is completely absorbed.
