Kelewele is a popular Ghanaian snack dish of fried plantains seasoned with spices. It is sometimes served with rice and stew, peanuts, or alone as a dessert or a snack. It is also popular for breakfast.

Ingredients:



2 plantains
1 teaspoon ground fresh ginger
1 teaspoon Cayenne pepper
1 teaspoon salt
1 teaspoon pepper
Juice from one lemon
Oil for frying

Instructions:

Peel plantains, cut into small cubes and mix with lemon juice.

Mix spices and roll the cubes of plantain in this mixture. Let stand at least ten minutes.

Heat oil. Fry the cubes in hot oil until golden brown. Ensure that the cubes do not stick together.

Blot to remove excess oil and sprinkle with salt and dried parsley. Serve hot.
