This Bearnaise sauce is a hot emulsified sauce made ??with mayonnaise and cayenne pepper, served to enhance the meat.

Creole Sauce Bearnaise


1 tablespoon lemon juice
1 onion, sliced
1 tarragon sprig, finely chopped
½ cup mayonnaise
½ cup milk
1 teaspoon ground cayenne pepper
Salt, pepper to taste


In a small saucepan over medium heat, combine lemon juice, onion and tarragon. Simmer for 2 minutes. Reduce heat to low and stir in mayonnaise, milk, cayenne, salt and pepper. Whisk until smooth and homogeneous texture.

Heat, stirring occasionally, until everything is heated through (do not boil).

Serve hot to meet the meat.
