This popular Colombian dish is a quick and tasty way to cook chicken. It's great served over white rice.

Coconut Milk Chicken Fondue


2 lb chicken breasts
2 lemons
3 crushed garlic
1 tablespoon oil
1 bay leaf
1 minced onion
2 cups coconut milk
2 tablespoons flour
Salt, Pepper to taste


Heat the oil in a skillet and throw in the chicken cut into pieces. When the chicken pieces are browned, add minced onion, crushed garlic, lemon juice, bay leaf, flour and stir quickly.

Add coconut milk, do not boil and let simmer over low heat for 15 minutes.

Serve on rice.
