Easily cooked, these pork chops are quickly prepared for the evening meal and all will appreciate the flavour.

Caribbean Pork Chop


8 pork chops lean about ½ inch think
2 large spoonful butter
½ cup finely cut onion
½ cup finely cut sweet pepper
½ cup chopped tomato
¼ cup pineapple pieces
Salt and pepper to taste


Brown chops in butter on both sides in a heavy skillet, turn a few times. Remove chops and keep warm.

Add onion, sweet pepper, tomato and pineapple in skillet. Mix in butter, cover and simmer for about fifteen minutes, stirring occasionally. Put back the chops in the skillet.

Season to taste, cover and allow the meat to simmer in the thick mixture until it is tender.

Serve over rice or with mashed potatoes.
