This corn dog recipe or sausage on a stick is made from Italian sausage coated with a slightly spicy batter. This corn dog is eaten very hot with mayonnaise, mustard or ketchup.

Cajun Corndog


1/2 cup all-purpose flour
1/2 cup corn flour
1/2 cup corn meal
2 teaspoons baking powder
3 tablespoons brown sugar
1 teaspoon nutmeg
1 teaspoon cinnamon
Salt and pepper to taste
1 egg
1 1/2 cup milk
Tabasco to taste
10 Italian sausages, cooked
Flour and oil for frying


In a large bowl, combine all-purpose flour, corn flour, corn meal and baking powder. Add brown sugar, nutmeg, cinnamon, salt and pepper and stir well. Make a well with your finger. In another bowl, combine milk, egg and Tabasco and pour into the well. Mix everything to a smooth paste.

Heat oil for frying. Insert sticks into sausages. Flour sausages and shake in order to remove excess flour. Soak them one by one into the batter.

Frying sausages 2 or 3 at a time in the oil. Keep them in oil 4-5 minutes, until they are golden brown.

Serve hot with ketchup, mayonnaise and mustard.
